Is there solace in revenge? Bond and "M" sniff a shadowy international network of power and corruption reaping billions. As Bond pursues the agents of an assassination attempt on "M," all roads lead to Dominic Greene, a world-renowned developer of green technology. Greene, a nasty piece of work, is intent on securing a barren area of Bolivia in exchange for assisting a strongman stage a coup there. The CIA looks the other way, and only Bond, with help from a retired spy and from a mysterious beauty, stands in Greene's way. "M" wonders if she can trust Bond, or if vengeance possesses him. sunflower oil, for deep frying
85g Flour
salt and fresh ground black pepper
1 large aubergine, sliced into 5mm thick rounds
2 Eggs, lightly beaten
85g parmesan, finely grated

1. Heat the oil in a deep fat fryer or large saucepan.
2. Season the flour with salt and pepper.
3. Dredge the aubergine slices with the flour and shake off any excess.
4. Dip the slices in beaten egg and then coat with the Parmesan on both sides.
5. Fry the aubergine slices in batches for 1-2 minutes, until golden. Drain on kitchen paper and serve immediately. |
